Green beans au gratin
Ingredients/Components
- milk
- all-purpose flour - 3/4 c
- margarine - 1/4 c
- dry mustard - 1/8 tsp
- paprika - 1 item
- grated Parmesan cheese
- slivered almonds - 1/2 c
- shredded Swiss cheese - 1/2 c
- fresh green beans or 2 cans prepared I use qt - 1 lb
- salt omit if using home-canned beans - 1 tsp
How to make green beans au gratin:
If using fresh green beans, wash, string and break into 1 1/2-inch pieces. Cook, covered, until tender (about 25 minutes). Drain and set aside.Melt margarine in a heavy saucepan over low heat. Blend flour, salt and mustard. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring until thick and bubbly. Stir in Swiss cheese. Cook over low heat until cheese is melted.
Combine cheese sauce and beans. Spoon into a lightly greased, 1 1/2-quart casserole. Sprinkle with Parmesan cheese and paprika.
Bake at 350° for 20 minutes. Top with almonds. Bake 5 to 10 minutes or until bubbly. Serves 6.
