Ingredients/Components

  • sugar - 1 tsp
  • lemon juice - 2 Tbsp
  • pepper - 1/4 tsp
  • small cucumber, sliced - 1/2 item
  • wine vinegar - 3 Tbsp
  • small clove garlic, minced - 1 item
  • ripe olives - 1 c
  • medium onion, sliced - 1/2 item
  • crushed dried oregano - 1/2 tsp
  • crumbled Feta cheese - 1 c
  • medium tomato, chopped coarsely - 1 item
  • torn mixed greens lettuce, endive, etc - 5 c
  • Pour Greek dressing over just before serving

How to make greek salad:

Mix ingredients, cover and chill until serving time, up to 2 hours. Pour Greek dressing over just before serving. Yields 6 to 8 side dish servings.Greek Vinaigrette:1/3 c. olive oil3 Tbsp. wine vinegar2 Tbsp. lemon juice1/2 tsp. crushed dried oregano1 tsp. sugar1 small clove garlic, minced1/4 tsp. pepper Combine in screw-top jar. Cover and shake well to mix. Store in refrigerator for up to 2 weeks.
