Ingredients/Components

  • pkg - 1 oz
  • salt - 1/4 tsp
  • ground nutmeg
  • freshly ground pepper - 1/4 tsp
  • small onion, chopped - 1 item
  • olive oil - 1 tsp
  • ground cumin - 1/4 tsp
  • garlic cloves, minced - 2 item
  • Ricotta cheese - 1/2 c
  • fresh lemon juice - 1 tsp
  • vegetable cooking spray - 1 item
  • 8-inch flour tortillas - 4 item
  • chunky salsa optional - 1 item

How to make greek quesadillas:

Saute onion in hot oil in a large nonstick skillet over medium-high heat 6 minutes or until tender. Add garlic and saut 1 minute; add spinach and saut 3 to 4 minutes or until spinach is slightly wilted. Drain mixture on paper towels; cool slightly. Wipe skillet clean and set aside. Stir together Feta cheese and next 7 ingredients until blended. Gently stir in spinach mixture. Spoon mixture evenly onto half of each tortilla. Fold in half, pressing gently to seal.

Heat skillet coated with cooking spray over medium-high heat. Add quesadillas, in 2 batches, and cook 2 to 3 minutes on each side or until quesadillas are lightly browned. Serve with chunky salsa, if desired.

One 10 ounce package chopped frozen spinach, thawed, may be substituted. Drain spinach well and press between paper towels.
