Greek pasta salad
Ingredients/Components
- salt - 1/2 tsp
- pepper - 1/4 tsp
- grated Parmesan cheese - 2 Tbsp
- 3 c
- chopped green onions - 2 Tbsp
- olive oil - 2/3 c
- Feta cheese, crumbled - 6 oz
- oregano leaves - 1/4 tsp
- medium tomato, cut into wedges - 1 item
- chopped fresh basil or 2 tsp - 1/4 c
- small green bell pepper, cut into 1/4-inch strips - 1 item
- small red bell pepper, cut into 1/4-inch strips - 1 item
- garlic peppercorn vinegar or white vinegar - 3 Tbsp
- pitted and sliced Greek olives - 1/2 c
How to make greek pasta salad:
Salad:8 oz. (3 c.) uncooked tri-colored spiral macaroni1 small green bell pepper, cut into 1/4-inch strips1 small red bell pepper, cut into 1/4-inch strips1 medium tomato, cut into wedges1/2 c. pitted and sliced Greek olives6 oz. Feta cheese, crumbled In blender container or food processor bowl with metal blade, combine all dressing ingredients. Cover; blend or process until smooth, set aside. Cook macaroni to desired doneness as directed on package. Drain; rinse with cold water.In large bowl, combine all salad ingredients. Pour dressing over salad; toss gently. Refrigerate at least 1 hour to blend flavors. Makes 4 to 5 servings.
