Ingredients/Components

  • eggs - 3 item
  • salt and pepper to taste - 1 item
  • uncooked rice - 1/4 c
  • juice of 1 medium lemon
  • strained well seasoned chicken stock - 4 c

How to make greek lemon soup:

Heat stock in saucepan. Add rice. Cover and simmer until rice is tender, about 25 minutes. Beat eggs, lemon juice and 1/2 cup hot stock. Season; serve. Makes 1 quart.
