Greek lemon soup
Ingredients/Components
- eggs - 3 item
- salt and pepper to taste - 1 item
- uncooked rice - 1/4 c
- juice of 1 medium lemon
- strained well seasoned chicken stock - 4 c
How to make greek lemon soup:
Heat stock in saucepan. Add rice. Cover and simmer until rice is tender, about 25 minutes. Beat eggs, lemon juice and 1/2 cup hot stock. Season; serve. Makes 1 quart.Recipe categories: Low fat, Soups & stews.
