Ingredients/Components
- sugar - 2 c
- oil
- eggs - 4 item
- flour - 2 c
- soda - 2 tsp
- cinnamon - 2 tsp
- salt - 1 tsp
- grated carrots - 3 c
- nuts - 1/2 c
- raisins optional - 1 item
- Sift in dry ingredients
- butter/margarine - 1/2 c
- vanilla - 1 tsp
- 3/4 to 6 1/4 sifted powdered sugar - 5 item
How to make grandma's carrot cake:
Beat eggs, oil & sugar, cream well. Sift in dry ingredients. Fold in carrots and nuts. Bake 40 minutes or until toothpick inserted near center comes out clean, at 350°. Makes 3 layers or 1 9 x 13 cake. Top with cinnamon cream cheese frosting.Cinnamon Cream Cheese Frosting:8 oz. pkg. cream cheese1/2 c. butter/margarine1 tsp. cinnamon1 tsp. vanilla5 3/4 to 6 1/4 sifted powdered sugar Beat all except powdered sugar on medium speed until light & fluffy. Gradually add about 1/2 of the powdered sugar, beating well. Gradually beat in enough of the remaining powdered sugar until spreading consistency.
