Ingredients/Components

  • lean, boneless beef chuck no fat - 2 lb
  • corn oil - 2 Tbsp
  • medium onions, chopped - 2 item
  • salt - 2 tsp
  • paprika - 2 tsp
  • dash of pepper - 1 item
  • water - 3 c
  • cloves garlic, minced - 2 item
  • plain low-fat yogurt - 1 c
  • caraway seed - 1 tsp
  • tomato paste - 2 Tbsp
  • cornstarch or flour - 1 Tbsp

How to make goulash:

Cut beef into 1-inch square pieces. Heat oil and add the meat. When meat is browned on all sides, add the chopped onion and garlic; saut? 2 minutes. Add salt, paprika, pepper, tomato paste, caraway seed and flour or cornstarch. Stir thoroughly, add water and simmer very slowly for 1 1/2 hours or until meat is tender. Stir in yogurt. Remove from heat immediately. Serves 6.

Exchange per serving: 3 meats, 1/2 milk, 1 fat.
