Ingredients/Components

  • sugar - 1 c
  • cinnamon - 1 tsp
  • salt
  • flour - 5 c
  • shortening - 1 c
  • ginger - 1 Tbsp
  • cloves - 1 tsp
  • eggs, well beaten - 2 item
  • New Orleans molasses - 1 c
  • soda, dissolved in vinegar - 1 Tbsp

How to make gingersnaps:

Cream shortening and sugar. Add eggs, molasses, soda and vinegar. Add sifted flour, salt and spices. Roll thin on a pastry cloth. Bake in moderate oven at 375°. Watch carefully, as ginger cookies burn easily.
