  • sugar - 1 tsp
  • ginger - 1/4 tsp
  • margarine, melted - 1/4 c
  • raw carrots, peeled and cut into 1/4-inch slices - 1 lb
  • finely chopped fresh parsley or 1 Tbsp - 2 Tbsp

How to make gingered carrots:

Place carrots in a saucepan. Add just enough water to cover. Boil 10 to 12 minutes or until barely tender. Drain. Mix ginger with sugar; sprinkle over carrots. Add melted margarine and stir gently. Sprinkle with parsley just before serving.
