Ingredients/Components

  • sugar - 1/4 c
  • cinnamon - 1 tsp
  • salt - 1/4 tsp
  • brown sugar - 1/4 c
  • nutmeg - 1/4 tsp
  • oil - 1/3 c
  • buttermilk - 3/4 c
  • baking soda - 1 tsp
  • egg - 1 item
  • molasses - 1/4 c
  • ginger - 1 tsp
  • cloves - 1/4 tsp
  • allspice - 1/4 tsp
  • egg white - 1 item
  • white flour - 1 c
  • wheat flour - 3/4 c

How to make gingerbread muffins:

Combine dry ingredients in large bowl; set aside. In large bowl, mix buttermilk, oil, egg, egg white and molasses. Add to the dry mixture and stir lightly; DO NOT OVERMIX! Drop into muffin tins. Bake 15 minutes at 400 degrees.
