Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • salt - 1/2 tsp
  • flour - 3 c
  • baking soda - 1 tsp
  • large eggs - 2 item
  • molasses - 1 c
  • ginger - 2 tsp
  • can water - 1 item
  • box powdered sugar
  • fresh lemon juice
  • stick unsalted butter - 1 item
  • sticks unsalted butter - 2 item

How to make gingerbread bars:

Icing:1 (1 lb.) box powdered sugar1 stick unsalted butter4 1/2 Tbsp. fresh lemon juice Preheat oven to 400°. Grease a 15 1/2 x 10 1/2 x 1-inch jelly roll pan.

In a large bowl, stir flour, sugar, salt, soda, ginger and cinnamon. In heavy saucepan, heat molasses, water and butter until butter melts and liquids are hot. Pour butter mixture over the flour mixture and beat until fairly smooth (a few lumps are okay). Add eggs, one at a time, beating well after each. Spread batter in pan, taking care to fill the corners. Bake 20 minutes. Remove from oven and place on wire rack. Spread with icing while still hot.

Icing: Place powdered sugar in large bowl. Heat butter and lemon juice in heavy saucepan until butter melts and lemon juice is hot. Try to time this so butter mixture is ready to add to sugar at about the time the gingerbread bars come out of the oven. Pour the butter mixture into powdered sugar and beat until smooth. Pour icing over the hot bars, spreading evenly. When cool, cut into 60 bars (1 1/2 x 1 3/4-inch).
