Gingerbread
Ingredients/Components
- cinnamon - 3/4 tsp
- salt - 1/2 tsp
- flour
- brown sugar - 1/2 c
- butter - 2 Tbsp
- cornstarch - 1 Tbsp
- water - 1 c
- soda - 1/2 tsp
- baking powder - 1/2 tsp
- boiling water - 1/2 c
- molasses - 1/2 c
- ginger - 3/4 tsp
- margarine - 1/2 c
- lemon juice
- grated lemon rind - 1/2 tsp
- egg, beaten - 1 item
- Add brown sugar, molasses, egg and flour sifted with salt, baking powder, soda, ginger and cinnamon
How to make gingerbread:
Pour boiling water over margarine. Add brown sugar, molasses, egg and flour sifted with salt, baking powder, soda, ginger and cinnamon. Beat until smooth. Bake in greased 8-inch square pan in 350° oven for 35 minutes. Cool in pan. Top with warm Lemon Sauce.Note: Prepare three recipes to serve 24 people.Lemon Sauce:1/2 c. sugar1 Tbsp. cornstarch1 c. water2 Tbsp. butter1/2 tsp. grated lemon rind1 1/2 Tbsp. lemon juice1/8 tsp. salt Combine sugar, cornstarch and water, stirring constantly over low heat. When sauce thickens, in about 5 minutes, remove from heat; stir in remaining ingredients. Excellent served warm on gingerbread.
