Ingredients/Components

  • vegetable oil - 1/4 c
  • hot water - 2 c
  • chopped onion - 1 c
  • can tomato paste - 1 oz
  • creamy peanut butter - 3/4 c
  • red pepper flakes - 1/2 tsp
  • finely chopped ginger root - 1 2
  • clove garlic, pressed - 1 item
  • to 14 chicken pieces - 12 item
  • each salt and ground ginger - 1 Tbsp
  • cans whole tomatoes, chopped - 2 oz
  • pineapple chunks if desired - 1 item
  • can chopped mild green chilies - 1 1/2

How to make ginger peanut chicken:

Remove skins from chicken. Sprinkle chicken with salt and ground ginger. Heat vegetable oil in a large skillet over medium-high heat. Cook chicken in hot oil, turning occasionally, until chicken is browned on all sides, about 10 minutes. Transfer chicken to a plate, reserving pan drippings in skillet.

Saut?© onion in pan drippings until tender. Add tomatoes, tomato paste, green chilies, ginger root, red pepper flakes and garlic and mix well.

Combine hot water and peanut butter in a small bowl and mix well. Add to the tomato mixture and mix well. Bring to a boil. Reduce the heat to low. Simmer mixture for 5 minutes. Return chicken to skillet.

Cook, covered until an instant-read thermometer inserted in center of meat registers 180° about 17 minutes. Garnish with sliced green onions and pineapple chunks, if desired. Serve with rice.
