German red cabbage



  • sugar - 1/3 c
  • pepper - 1/4 tsp
  • salt optional - 3/4 tsp
  • medium onion, sliced - 1 item
  • medium red cabbage, shredded - 1 item
  • white vinegar or cider vinegar - 1/3 c
  • unpeeled apple, cored and sliced - 1 item

How to make german red cabbage:

Coat inside of large Dutch oven with cooking spray. Saute onion and apple until tender. Add all remaining ingredients. Cover and cook until tender, about 1 hour. Serve hot or cold. Yields 10 servings. Can be frozen in serving portions.

(One serving made with sweetener and no salt equals 1 1/2 vegetable exchange, 43 calories, 1 mg sodium, 0 cholesterol and less than 1 g fat.)
