German potato salad



  • salt - 2 tsp
  • flour - 1 Tbsp
  • water - 2/3 c
  • vinegar - 1/4 c
  • pepper - 1/4 tsp
  • chopped onion - 2 Tbsp
  • bacon drippings - 1/4 c
  • slices bacon, diced and browned - 4 item
  • hard boiled egg - 1 item
  • cold cubed potatoes - 4 c
  • sprig of parsley - 1 item
  • Pour dressing over potato mixture and mix to coat all

How to make german potato salad:

Place potatoes, onions, eggs and parsley in a greased casserole or baking pan. Pour dressing over potato mixture and mix to coat all. Heat oven to 350° and cook for 30 minutes. Serves 6 to 8.Dressing Preparation:1/4 c. sugar1/4 tsp. pepper1 Tbsp. flour1/4 c. vinegar2 tsp. salt2/3 c. water1/4 c. bacon drippings Combine sugar, flour, salt and pepper in top of double boiler. Stir in vinegar, water, bacon drippings. Cook stirring constantly about 5 minutes or until thick.
