Gazpacho
Ingredients/Components
- sugar - 1 tsp
- salt - 3/4 tsp
- olive oil - 3 Tbsp
- tomato juice - 3 c
- hot pepper sauce - 1/2 tsp
- small garlic clove - 1 item
- small onion, cut up - 1 item
- croutons for garnish - 1 item
- small green pepper, cut up - 1 item
- chopped onion for garnish - 1/2 c
- large tomatoes, peeled, seeded and cut up - 3 item
- cucumber, peeled, seeded and cut up - 1 item
- cucumber, diced and seeded for garnish - 1/2 c
- diced green pepper for garnish - 1/2 c
How to make gazpacho:
In covered blender container at high speed, blend first 10 ingredients 1/3 at a time until fairly smooth. Pour into large bowl; cover and chill. Serve in soup bowls and pass chopped vegetables and croutons for garnish.Recipe categories: Appetizers, Vegan, Soups & stews.
