Gazpacho
Ingredients/Components
- salt - 1 tsp
- Worcestershire sauce - 1/2 tsp
- snipped parsley - 2 tsp
- wine vinegar - 2 3
- olive oil - 2 Tbsp
- tomato juice - 2 c
- small clove garlic, minced - 1 item
- finely chopped onion - 1/4 c
- fresh ground pepper - 1/4 tsp
- finely chopped green pepper - 1/2 c
- finely chopped celery - 1/2 c
- finely chopped, peeled tomato - 1 c
- finely chopped cucumber - 1/2 c
- snipped chives - 1 tsp
How to make gazpacho:
Combine all ingredients in a stainless steel or glass bowl. Cover and chill thoroughly, at least 4 hours. Serve in chilled cups. Top with croutons. Makes 6 servings.Recipe categories: Appetizers, Vegan, Soups & stews.
