Ingredients/Components

  • cinnamon
  • vanilla extract - 1 tsp
  • butter or margarine - 1/2 c
  • salt - 1/4 tsp
  • baking soda - 1/2 tsp
  • raisins - 1/2 c
  • orange juice - 1/4 c
  • 6 oz - 3/4 c
  • grated orange rind - 1 Tbsp
  • walnuts - 1/2 c
  • rolled oats not instant
  • frozen apple juice concentrate - 1/4 c
  • unblended all-purpose flour or whole wheat flour - 3/4 c

How to make fruity oatmeal cookies:

Preheat oven to 325°. Lightly grease 2 cookie sheets. In small saucepan, combine the apple juice concentrate and dates. Simmer until the dates are slightly softened, about 2 to 3 minutes. Add the butter, orange rind, orange juice and vanilla, stirring until the butter is melted. Puree the mixture in a blender or food processor. Transfer to a bowl; set aside to cool.

In a large bowl, sift together the flour, baking soda, cinnamon and salt. Mix the date mixture with the dry ingredients. Blend in the rolled oats, raisins and walnuts mixing well. Place heaping teaspoonfuls of the mixture 2 inches apart on the cookie sheet. Press with a wet spoon or spatula to flatten. Bake for 15 to 20 minutes or until browned. Let cookies cool briefly before removing them to wire racks to cool completely. Yields 2 1/2 to 3 dozen cookies.
