Ingredients/Components

  • sugar - 2 c
  • nuts - 1 lb
  • self-rising flour
  • sifted all-purpose flour
  • rum flavoring - 2 tsp
  • pineapple juice - 1/2 c
  • candied cherries - 1/2 lb
  • large eggs, separated - 4 item
  • candied pineapple - 1/2 lb
  • fig preserves - 1/2 pt
  • boxes seedless raisins - 2 item
  • butter or sugar

How to make fruitcake:

Sift together both types of flour, setting aside 1 cup to roll raisins in.

Cream together butter, sugar, alternating egg yolks and 4 cups of flour, beginning with flour and ending with flour. Mix well. Add pineapple juice, rum flavoring, beaten egg whites and fig preserves to batter. Mix well. Batter will be thick. Add nuts, candied cherries, pineapple and raisins (roll raisins in cup of flour before adding to batter). Mix well. Pour into a well-greased and floured tube pan. Bake at 225° for 4 hours.
