Fruit stuffed pork roast
Ingredients/Components
- butter - 3 Tbsp
- apple, chopped - 1/2 c
- onion, chopped - 1/3 c
- celery, sliced - 1/4 c
- dried apricots, chopped - 1/4 c
- raisins - 2 Tbsp
- corn bread stuffing mix - 2 c
- dried thyme, crushed - 1/4 tsp
- dried marjoram, crushed - 1/4 tsp
- salt - 1/4 tsp
- pepper - 1/4 tsp
- boneless pork loin roast*
How to make fruit stuffed pork roast:
*Have your butcher debone pork loin roast for you, or debone yourself (directions to follow).Melt butter in a large skillet. Add apple, onion, celery, apricots and raisins. Cook, stirring frequently, for about 5 minutes, or until onion is tender. Stir in stuffing mix, thyme, marjoram, salt and pepper.
Lay meat, fat side up, on a cutting board. Butterfly by cutting in half horizontally almost through to opposite side. Cover cut side with plastic wrap; pound to flatten slightly.
