Fruit cocktail cake



  • sugar
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour - 2 c
  • brown sugar - 1/4 c
  • butter
  • baking soda - 1 tsp
  • fruit cocktail, drained - 2 c
  • pecans, chopped - 1/2 c
  • condensed milk - 3/4 c

How to make fruit cocktail cake:

Glaze:1 c. butter1 tsp. vanilla3/4 c. sugar3/4 c. condensed milk Cake: Mix flour, fruit cocktail, eggs, sugar, baking soda and salt in a large mixing bowl. Pour mixture into a 9 x 13-inch greased and floured cake pan. Sprinkle brown sugar and nuts on top before baking. Bake 40 to 45 minutes in oven preheated to 350°.

Glaze: Combine butter, sugar and condensed milk in a saucepan. Bring mixture to a boil while stirring. Boil 4 to 5 minutes. Remove from heat and stir vanilla into mixture. Allow cake to completely cool. Poke finger-size holes every 3-inches in the cake. Pour glaze, while hot, onto cake and smooth.
