  • sugar
  • eggs - 2 item
  • vanilla - 1 tsp
  • chopped pecans - 1/2 c
  • stick margarine - 1 item
  • brown sugar - 1/4 c
  • evaporated milk - 1 c
  • coconut - 1/2 c
  • self-rising flour - 2 c
  • 2 can fruit cocktail
  • Pour into greased and floured loaf pan

How to make fruit cocktail cake:

Mix sugar, flour, eggs and fruit cocktail. Pour into greased and floured loaf pan. Add brown sugar and coconut on top of batter. Bake at 350° until toothpick comes out clean.Icing For Fruit Cocktail Cake:1 c. sugar1 stick margarine1 c. evaporated milk1/2 c. chopped pecans1/2 c. coconut1 tsp. vanilla Mix and cook until slightly thickened the sugar, margarine and evaporated milk. Remove from heat. Add pecans, coconut and vanilla. Spread on cake while still warm. Serve directly from pan.
