  • sugar - 2 c
  • vanilla - 1 tsp
  • milk - 1 c
  • salt - 1/2 tsp
  • flour
  • butter
  • eggs, separated - 6 item
  • coconut - 1 c
  • chopped dates - 1 c
  • brandy extract - 1 tsp
  • cream of tartar - 1/2 tsp
  • grated orange peel - 1 Tbsp
  • chopped pecans or walnuts - 1 c
  • golden raisins - 2 c
  • chopped apricots - 1 c
  • cranberries, halved - 1 c

How to make fruit cake:

Will also need two buttered and floured 6-cup molds.

Beat butter until creamy. Add sugar. Beat 6 egg yolks and add to mixture. Combine milk, brandy extract and vanilla. Set aside.

Mix flour and salt. Alternately add milk and flour to butter. Mix until well blended. Fold in fruit and nuts. Beat the 6 egg whites with the cream of tartar until stiff but not dry. Fold whites gently into fruit mix until no white egg shows. Pour batter into buttered and floured 6 cup molds. Bake at 275° for 2 1/2 hours or until toothpick comes out clean. Cool, unmold and wrap in plastic to store.
