Ingredients/Components
- sugar - 2 c
- eggs - 9 item
- vanilla - 3 tsp
- butter - 1/2 lb
- self-rising flour - 3 c
- margarine - 1/4 lb
- rum flavoring - 1 Tbsp
- pineapple - 1 lb
- white raisins - 1/2 lb
- dates
- cherries - 1 lb
- figs
- mixed fruit - 8 oz
- coconut, ground, or can - 1 item
- frozen concentrated orange juice, with 4 tsp - 1/2 c
- mixed nuts 3 pt - 3 lb
How to make fruit cake:
Cook large cake for 4 hours and 20 minutes at 200°. Increase heat to brown cake. In mixing bowl, mix the butter, margarine and sugar; beat until creamy. Add eggs, one at a time, until all are added. Add orange juice with sugar. Add the flavoring and flour; beat until all is mixed well. Mix all other ingredients in large pan with flour; coat well before adding to batter.
