Frozen waldorf salad
Ingredients/Components
- sugar - 1/2 c
- eggs - 2 item
- salt - 1/2 tsp
- miniature marshmallows - 1/2 c
- lemon juice - 1/4 c
- celery, diced - 1/2 c
- pecans or walnuts, chopped - 1/2 c
- apples, diced
- 8 3/4 oz can crushed pineapple - 1 item
- 8 oz carton Cool Whip - 1 item
How to make frozen waldorf salad:
Drain pineapple. Combine the syrup, eggs, sugar, lemon juice and salt in double boiler and cook until thick. (Mix well with wire whisk before heating to keep eggs from cooking before mixed in - doing this, mixture may be heated directly on stove.) Cool. Add pineapple, apples, celery, nuts, marshmallows and cool ship. Freeze. Serve on lettuce. Tastes best when set out a few minutes before serving.*
