Frozen fruit cups



  • sugar - 1/2 c
  • salt - 1/8 tsp
  • buttermilk - 2 c
  • small lemon - 1 item
  • assorted fresh fruit halved strawberries, chopped peaches, chopped nectarine wedges, blueberries or raspberries - 2 c

How to make frozen fruit cups:

To serve, garnish each with lemon leaves, strawberry halves, blueberries and nectarine wedges.

Line twelve 2 1/2 x 1 1/4-inch muffin pan cups with fluted paper baking cups. In large bowl, grate lemon. Add buttermilk, sugar and salt. With wire whisk, mix until blended. Gently stir in 1 1/4 cups fruit. Spoon mixture into paper baking cups. Top with remaining 3/4 cup fruit (some fruit will stay above mixture for pretty color). Cover, freeze until firm, about 3 hours. Peel off paper, let dessert stand at room temperature for 10 to 15 minutes to soften slightly for easier eating. Makes 12 servings. Begin about 3 1/2 hours before serving or day before.
