Frozen cranberry salad


Ingredients/Components
- sugar - 2 Tbsp
- flaked coconut - 2 c
- chopped walnuts - 2 c
- lettuce leaves - 1 item
- salad dressing or mayonnaise - 1/4 c
- carton frozen whipped topping, thawed - 1 oz
- each pkg - 4 oz
- each cans crushed pineapple, drained - 2 oz
- each cans whole berry cranberry sauce - 2 oz
- fresh or frozen cranberries, chopped optional - 1 c
How to make frozen cranberry salad:
In a medium bowl, blend cream cheese, salad dressing and sugar. Fold in the whipped topping. Set aside. In a large mixing bowl, combine pineapple, nuts, coconut and cranberry sauce. Add cranberries, if desired. Gently combine with cream cheese mixture. Spread into a 13 x 9 x 2-inch glass baking dish or 3 foil lined 8 x 4 x 2-inch loaf pans. Cover and freeze. Remove from freezer 10 to 15 minutes before serving. Cut into squares or slices. Serve on lettuce leaves. Makes 24 servings.Recipe categories: Desserts, Lunch/snacks, Appetizers.
