Frozen blueberry muffins
Ingredients/Components
- sugar - 2 c
- eggs - 4 item
- vanilla - 2 tsp
- milk - 1 c
- salt - 1/2 tsp
- flour - 4 c
- nutmeg - 1/2 tsp
- baking powder - 4 tsp
- butter or margarine, softened - 1 c
- frozen blueberries - 2 c
How to make frozen blueberry muffins:
Topping:2 Tbsp. sugar1/2 tsp. nutmeg It's best to fold the berries while frozen. In a large bowl, combine the flour, baking powder and salt. In a mixing bowl, cream butter and sugar. Add eggs, milk and vanilla. Mix well. Stir in dry ingredients just until moistened. Fold in frozen blueberries. Fill greased or paper-lined muffin cups, two thirds full. Combine sugar and nutmeg; sprinkle over muffins. Bake at 375° for 20 to 25 minutes or until muffins test done. Cool in pan for 10 minutes, before removing to a wire rack. Yield: about 2 dozen.
