Frog eye salad



  • sugar - 2 c
  • flour - 3 Tbsp
  • egg yolks - 2 item
  • small cans mandarin oranges - 2 item
  • cans crushed pineapple - 2 oz
  • bag miniature marshmallows - 1 (16
  • cans chunk pineapple - 2 oz
  • large tub Cool Whip - 1 item
  • acini de pepe macaroni - 1 c

How to make frog eye salad:

Drain juice from pineapple; reserve juice. Add 2 cups of sugar and 3 tablespoons of flour. Cook until thickened. Add egg yolks; cook 2 minutes longer, stirring often. Let cool completely. Cook acini de pepe macaroni about 8 minutes. Rinse and drain completely. Pour thickened juice over macaroni; let set overnight. Add all fruit, marshmallows and Cool Whip; fold to mix. This is great for potlucks or picnics. Freezes well, also!
