Ingredients/Components

  • eggs - 8 item
  • milk - 1/2 c
  • salt - 1 tsp
  • butter - 1 Tbsp
  • Worcestershire sauce - 1 tsp
  • medium tomato - 1 item
  • onion, finely chopped - 1/2 c
  • cooked rice - 2 c
  • shredded cheese - 1/2 c
  • can green chilies - 1 oz
  • or 5 drops Tabasco - 4 item

How to make frittata:

In 10-inch skillet over medium heat, brown onion in butter. Beat eggs with milk and seasonings. Stir in rice, tomato and green chilies. Pour in skillet. Reduce heat to medium-low heat. Cook until top is set (12 to 15 minutes). Sprinkle with cheese. Remove from heat and let stand for 10 minutes. Makes 4 servings.
