Ingredients/Components

  • cooking oil - 3 Tbsp
  • onion, chopped - 1/4 c
  • parsley, chopped - 1/4 c
  • soy sauce to taste - 1 item
  • eggs, scrambled - 3 item
  • day old rice if possible - 4 c
  • cooked chicken I like more* - 1 c

How to make fried rice:

*May use turkey.

Heat oil in wok or large frying pan to about 350°, until a drop of water pops when dropped in. Stir in rice. Cook, stirring until lightly browned. Add onion, parsley and meat. Stir thoroughly, allowing onions and parsley to cook slightly. Push rice back from the center of the pan. Pour in eggs. Cook eggs until moist, then mix throughout rice. Add soy sauce to taste.

Having had fried rice cooked by a Chinese friend, I found that it can contain pretty much what is on hand. Many add peas or snow peas. Sometimes the meat is omitted and it is served as a side dish.
