- buttermilk - 1/2 c
- egg - 1 item
- salt and pepper to taste - 1 item
- large eggplant - 1 item
- Mazola oil - 1 item
- flour enough to make a smooth paste - 1 item
How to make fried eggplant:
Peel eggplant and cut in chunks, approximately 1-inch cubes in size. Beat egg. Add milk and enough flour to thicken. Add salt and pepper. Dip the eggplant cubes thoroughly, coating them heavily. Drop in hot oil and fry until golden brown. Be careful not to burn. Drain and eat while hot.Recipe categories: Appetizers, Side dish, Vegetables.
