Fresh peach cobbler
Ingredients/Components
- sugar - 3/4 c
- cinnamon - 1 tsp
- packed brown sugar - 3/4 c
- cornstarch - 1 Tbsp
- water - 1/4 c
- baking powder - 2 tsp
- all-purpose flour
- lemon juice - 1 Tbsp
- skim milk - 1/3 c
- liquid Butter Buds - 1/3 c
- lite salt optional - 1/4 tsp
- Egg Beaters, beaten - 1 item
- fresh or frozen, peeled, sliced peaches about 6 medium - 6 c
How to make fresh peach cobbler:
In a 3-quart saucepan, combine peaches, brown sugar, cornstarch, lemon juice and cinnamon. Bring to a boil, stirring constantly. Boil and stir 1 minute. Pour mixture into a 1 1/2-quart casserole that has been sprayed with a nonfat cooking spray.Heat oven to 350°. Combine dry ingredients. Stir in liquid Butter Buds with a fork until moistened and it resembles coarse crumbs. Add skim milk, water and Egg Beaters, mixing just until dry ingredients are moistened. Drop by scant 1/4 cupfuls over the hot filling. Bake 30 to 35 minutes or until topping is light brown. Serve with Dream Whip on top or nonfat frozen yogurt.
Variation: You can substitute apples, cherries, blueberries or the fruit of your choice in the place of the peaches. Serves 6 to 8.
