Ingredients/Components

  • butter or margarine - 1/4 c
  • whipping cream - 2 c
  • grated Parmesan cheese - 1 c
  • chopped fresh parsley - 1 item
  • cloves garlic, minced - 2 item
  • sliced almonds, toasted - 1 c
  • beef broth - 2 c
  • medium onions, minced - 2 item
  • cooking sherry optional - 1/4 c
  • fresh mushrooms, coarsely chopped - 2 lb

How to make fresh mushroom soup:

Saute onion and garlic in butter in a Dutch oven over medium heat until onion is tender. Add mushrooms; cook over low heat for 10 minutes or until tender. Gradually add cream, broth and sherry (optional). Continue to cook until thoroughly heated. Do not boil!

If desired, sprinkle each serving with cheese, almonds and parsley. Yields 2 1/2 quarts.
