Ingredients/Components

  • butter or margarine - 3 Tbsp
  • cornstarch - 1 Tbsp
  • water - 2 c
  • chopped onion - 1/4 c
  • mushrooms, sliced - 1/2 lb
  • minced parsley - 2 tsp
  • whipping cream or half and half - 1/2 c
  • beef bouillon granules or use canned beef broth as part of the water - 2 tsp

How to make fresh mushroom soup:

In medium saucepan over medium heat, saute onion in butter or margarine for 3 minutes. Add mushrooms and saute 2 minutes longer. Stir in water and bouillon. Bring to boil. Reduce heat to low. Cover and simmer 15 minutes. In small bowl, stir cream and cornstarch. Stir into mushroom mixture. Stirring, bring to boil and boil 1 to 2 minutes or until slightly thickened. Serve in individual bowls and sprinkle with parsley. Makes 6 (1/2-cup) servings.
