Fresh corn pudding
Ingredients/Components
- sugar - 2 tsp
- milk - 1 c
- salt - 3/4 tsp
- butter - 2 Tbsp
- cornstarch
- eggs, beaten - 3 item
- pepper - 1/16 tsp
- finely diced onion - 1/4 c
- finely diced green pepper - 1/4 c
- to 5 ears fresh corn - 4 item
How to make fresh corn pudding:
Cut corn kernels from cobs. Measure 2 2/3 cups without packing down. In a small skillet saute butter, onion and bell pepper until wilted. In a medium bowl sift together cornstarch, sugar, salt, pepper, milk and eggs. Mix well, then add the corn and onion mixture. Pour in a pan and bake in a 300° oven about 1 hour or until knife inserted into center comes out clean. Remove from oven and let stand 10 minutes before cutting and serving.
