Fresh corn pancakes
Ingredients/Components
- sugar - 1 Tbsp
- milk - 1 c
- salt - 1 tsp
- flour - 1 c
- baking powder - 1 tsp
- large eggs - 2 item
- cooking oil - 2 Tbsp
- pepper - 1 tsp
- large ears corn - 3 item
How to make fresh corn pancakes:
With a sharp knife, cut kernels from corn. With back of a knife, scrape cobs to release milky pulp. Make at least 2 cups. In a large bowl, stir together flour, sugar, baking powder, salt and pepper. In a small bowl, beat together eggs, milk and cooking oil. Add to flour mixture, stirring only until flour is moistened. Stir in corn. Cook in hot oil, 2 tablespoons batter for each pancake.
