Ingredients/Components

  • sugar - 2 c
  • vanilla - 1 tsp
  • salt - 1/4 tsp
  • butter - 1/2 c
  • baking powder
  • egg whites - 4 item
  • sifted flour - 2 c
  • fresh coconut - 1 c
  • milk or coconut milk - 3/4 c

How to make fresh coconut cake:

Cream butter. Add sugar gradually. (Save a little from measured amount to lightly dust coconut.) Add milk alternately with sifted dry ingredients. Add vanilla. Fold in finely grated coconut. Beat egg whites until stiff. Fold into batter. Bake at 350° for 35 minutes.
