Fresh apple cake
Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1 tsp
- butter - 1/2 c
- evaporated milk - 1/4 c
- oil
- baking soda - 1 tsp
- plain flour - 3 c
- pecans, chopped - 1 c
- apples, peeled and chopped - 3 item
- Blend eggs, oil and sugar until creamy
How to make fresh apple cake:
Preheat oven to 350°. Blend eggs, oil and sugar until creamy. Add flour, salt and baking soda, a little at a time; blend well (batter will be stiff). Fold in apples, vanilla and nuts. Pour into tube pan. Bake for 1 hour. Remove from pan after about 30 minutes.Note: You may substitute self-rising flour instead of the plain flour. Just omit the salt and baking soda and use only 2 1/2 cups self-rising flour. Also for a variation, you may add 1 cup shredded coconut to this recipe.Topping:1 c. brown sugar1/2 c. butter1/4 c. evaporated milk1 tsp. vanilla Cook ingredients, bringing to a rolling boil. Beat and cool. Spread on cake.
