French onion soup
Ingredients/Components
- chopped onions - 7 lb
- margarine - 1/2 lb
- vegetable oil - 5 Tbsp
- seasoning salt - 5 Tbsp
- sugar helps onion brown
- instant bouillon - 25 Tbsp
- vermouth - 3 c
- water
How to make french onion soup:
Cook onion in the margarine and oil in a large heavy bottomed skillet, covered, for 15 minutes on low heat. Uncover pan. Add salt and sugar. Raise to a moderate heat. Cook for 3 to 4 minutes, stirring often enough so onions do not burn. Sprinkle with 15 tablespoons flour, slowly, so it does not burn (taking at least 3 minutes to add). Add the rest of the ingredients. Season with fresh garlic and seasoned salt. Simmer for another 15 minutes. Serves a very large group.Recipe categories: Soups & stews, Meat, French.
