French market soup
Ingredients/Components
- salt - 1 Tbsp
- stalks celery - 6 item
- medium onions - 2 item
- tomatoes - 1 qt
- ham hock - 1 item
- large bell pepper - 1 item
- large chicken - 1/2 item
- dry navy beans - 1/4 c
- smoked sausage - 1/2 lb
- dry black-eyed peas - 1/4 c
- dry pinto beans - 1/4 c
- or 2 bay leaves - 1 item
- dry black beans - 1/4 c
- dry baby lima beans - 1/4 c
- dry split peas - 1/4 c
- dry red beans - 1/4 c
- dry garbanzo beans - 1/4 c
- barley lentils - 1/4 c
How to make french market soup:
Wash beans; place in bowl. Cover with water and soak overnight. Next day, drain off water. Add 3 quart of fresh water, ham hock and bay leaves. Simmer, covered for 3 hours. Add other ingredients except sausage and chicken. Simmer, uncovered, for 1 1/2 hours. Add chicken and sausage; simmer until chicken is done. Remove bones.
