  • 15 bean soup mix - 1 pkg
  • salt - 1 Tbsp
  • water - 3 qt
  • ham hock - 1 item
  • bay leaf - 1 item
  • thyme - 1/8 tsp
  • canned tomatoes - 1 qt
  • medium onions, chopped - 2 item
  • stalks celery, chopped - 6 item
  • green pepper, chopped - 1 item
  • cloves garlic, chopped - 2 item
  • red pepper to taste - 1 item
  • chicken, cooked - 1/2 item
  • smoked sausage - 1 lb
  • parsley - 2 Tbsp

How to make french market soup:

Soak soup beans overnight with salt. Drain and add water, ham hock, bay leaf and thyme. Cover and simmer for 3 hours. Add tomatoes, onions, celery, green pepper, garlic and red pepper. Simmer 1 1/2 hours, uncovered. Add chicken and smoked sausage. Ten minutes before serving, add parsley.
