French market soup
Ingredients/Components
- 15 bean soup mix - 1 pkg
- salt - 1 Tbsp
- water - 3 qt
- ham hock - 1 item
- bay leaf - 1 item
- thyme - 1/8 tsp
- canned tomatoes - 1 qt
- medium onions, chopped - 2 item
- stalks celery, chopped - 6 item
- green pepper, chopped - 1 item
- cloves garlic, chopped - 2 item
- red pepper to taste - 1 item
- chicken, cooked - 1/2 item
- smoked sausage - 1 lb
- parsley - 2 Tbsp
How to make french market soup:
Soak soup beans overnight with salt. Drain and add water, ham hock, bay leaf and thyme. Cover and simmer for 3 hours. Add tomatoes, onions, celery, green pepper, garlic and red pepper. Simmer 1 1/2 hours, uncovered. Add chicken and smoked sausage. Ten minutes before serving, add parsley.Recipe categories: Weeknight, Soups & stews, Beans.
