How to make freezer dinner rolls:
Combine 2 c. flour, sugar, salt and yeast in a large mixing bowl, stir mixture and set aside.Combine water, milk and butter in a saucepan; heat until butter melts. Cool to 120 to 130 degrees. Stir into flour mixture and beat at medium speed for 2 minutes. Add 1/2 c. flour and eggs, beat at high speed for 2 minutes. Gradually stir in enough remaining flour to make a soft dough. Place dough in a well greased bowl, turning to grease top. Cover and let rise in a warm place, away from draft for 30 minutes or until it is doubled in size.
Punch down dough, turn out onto lightly floured surface, knead 4 or 5 times.
Lightly grease muffin pans, shape dough into 1 inch balls - place 3 balls in each muffin cup. Cover and let rise in a warm place for 30 minutes or until doubled in size.
To freeze - shape dough into 1 inch balls and place on waxed paper lined baking sheet then freeze. When frozen, place balls into a plastic bag for up to 1 month.
To bake - grease muffin cups - remove desired amount from freezer and place 3 balls in each muffin cup. Cover and let rise for 1 hour. Bake at 350 degrees for 15 minutes or until golden brown.
