  • salt
  • flour - 1/4 c
  • butter - 1/4 c
  • toasted slivered almonds - 1/2 c
  • salad oil - 2 Tbsp
  • paprika - 1 Tbsp
  • freshly chopped parsley - 2 Tbsp
  • fresh lemon juice - 2 Tbsp
  • Tabasco - 1/4 Tbsp
  • flounder fillet - 2 lb

How to make flounder amandine:

Preheat oven to broil. Rinse fillets and dry with paper towels. Mix flour, paprika and salt; coat fillets on both sides with mixture. Butter a shallow baking pan and arrange fillets close together. Brush with oil. Melt butter in saucepan. Add lemon juice and Tabasco. Broil fillets 2 to 3-inches from heat for 5 to 8 minutes or until a light crust forms on surface. Do not turn while broiling and do not overcook. Transfer to warm platter and pour butter sauce over top. Sprinkle with toasted almonds and parsley.

Note: Toast sliced blanched almonds on a baking sheet at 325° for 8 to 10 minutes or until golden brown. Serve with Lemon Rice.
