Ingredients/Components

  • sugar - 1 c
  • vanilla - 1 tsp
  • milk - 2 c
  • large eggs - 5 item
  • sugar for caramel - 1/4 c

How to make flan:

This recipe uses a 2 1/2 x 9-inch aluminum ring mold.

Make the caramel: Put 1/4 cup sugar in the mold; heat over medium-high heat until melted. When sugar has melted, swirl the caramel around in the mold until bottom and sides are coated (extra caramel on the bottom of the mold is okay). Set aside; caramel will harden as it cools.

Scald the milk and sugar; set aside. In a bowl, beat the eggs for 1 minute with electric beater. Gradually add the hot milk and sugar to the eggs while continuing to beat. Add the vanilla. Pour mixture into caramelized mold. Bake at 350° for about 40 minutes. Test for doneness with a toothpick or knife. Chill well. Insert knife between the mold and the Flan. Unmold onto flat serving plate large enough to accommodate the expanded Flan and its "juice." Serve in small portions with "juice." Whipped cream is optional.
