Fish chowder
Ingredients/Components
- milk - 2 c
- salt - 2 tsp
- flour - 3 Tbsp
- water - 2 c
- pepper - 1/8 tsp
- chopped onion - 1/2 c
- medium potatoes, peeled and cubed - 2 item
- slices bacon - 4 item
- dried crushed thyme - 1/4 tsp
- medium carrot, peeled and diced - 1 item
- or 3 fresh or thawed fish fillets - 2 item
How to make fish chowder:
Cut fish into 1-inch cubes. In a large saucepan, bring water to boiling. Add potatoes and carrot. Reduce heat, cover and simmer 5 minutes. Stir in fish, salt and pepper. Simmer, covered, 10 to 15 minutes. Meanwhile in skillet, cook bacon until crisp. Drain, reserving 2 tablespoons drippings in skillet. Cook onion in skillet until tender. Crumble bacon. Blend 1/2 cup of the milk with flour, then stir into fish mixture along with bacon, onion, thyme and remaining milk. Cook and stir until bubbly; cook another 3 to 5 minutes longer, stirring constantly. Serves 4.Recipe categories: Soups & stews, Chowders, Cod.
