Ingredients/Components

  • flour - 1/4 c
  • melted butter - 1/4 c
  • sliced almonds - 1/2 c
  • lemon juice - 2 Tbsp
  • paprika - 1 tsp
  • chopped parsley - 1 Tbsp
  • seasoned salt - 1 tsp
  • fish fillets - 2 lb
  • to 5 drops hot pepper sauce - 4 item

How to make fish amandine:

Combine flour, seasoned salt and paprika. Roll fish in flour mixture and place in single layer in a well-greased baking dish. Drizzle 2 tablespoons melted butter over portions. Broil about 4 inches from heat for 10 to 15 minutes or until fish flakes easily when tested with a fork.

While fish is broiling, saute almonds in remaining butter until golden brown, stirring constantly. Remove from heat and mix in lemon juice, pepper sauce and parsley. Pour over fish and serve at once. Makes 4 to 6 servings.
