Ingredients/Components

  • baking soda - 1/2 c
  • vinegar - 1 qt
  • cloves - 1 Tbsp
  • sticks cinnamon - 6 item
  • figs - 7 lb
  • 8 c

How to make fig pickles:

Wash figs and sprinkle baking soda over figs. Cover with boiling water and let stand 10 minutes. Drain and wash. Add clear hot water to figs and let boil until tender, about 15 minutes. Drain.

Make syrup of sugar, vinegar, cinnamon and cloves. Boil 5 minutes. Pour syrup over figs. Let stand 24 hours or overnight. Second and third days, drain off syrup. Heat to boiling and pour back over figs. Fourth day, heat figs in syrup and seal in sterile jars.
