Fiesta coleslaw
Ingredients/Components
- sugar - 2 tsp
- salt
- vinegar - 2 tsp
- shredded carrot - 1/2 c
- mayonnaise - 2/3 c
- green pepper - 1/4 c
- shredded green cabbage - 2 c
- shredded red cabbage - 2 c
- sliced olives - 1/2 c
How to make fiesta coleslaw:
Cover green and red cabbage with cold water combined with 1 teaspoon salt. Let soak 1 hour. In large bowl, combine mayonnaise, vinegar, sugar and remaining salt. Add drained cabbage, carrot, olives and green pepper; toss lightly. Refrigerate, covered, several hours before serving.Recipe categories: Salads, Southwestern u.s., Tex Mex.
