  • margarine - 1 Tbsp
  • small cloves garlic, minced - 2 item
  • all-purpose flour - 1 Tbsp
  • skim milk
  • light process cream cheese - 2 Tbsp
  • grated fresh Parmesan cheese, divided
  • hot cooked fettucine - 4 c
  • chopped fresh parsley - 2 tsp
  • fresh ground pepper - 1 item

How to make fettuccine alfredo:

Melt margarine in a saucepan over medium heat. Add garlic; saute 1 minute. Stir in flour. Gradually add milk, stirring with a wire whisk until blended. Cook 8 minutes or until thickened and bubbly, stirring constantly. Stir in cream cheese; cook 2 minutes. Add 1 cup Parmesan cheese, stirring constantly, until it melts. Pour over hot fettuccine; toss well to coat. Top with remaining 1/4 cup Parmesan cheese, fresh parsley and pepper. Makes four 1-cup servings. Contains 345 calories, 9.75 g fat, 18 mg cholesterol and 401 mg sodium.
